All the time, at least at walk in spots without many reviews, and where turnover is high. E.g., pretty much every FS store on the UES.
At the well-reviewed midtown spots, very rarely, since there's a lot more intel out there. But, if I see a provider I'm disappointed with (usually due to misleading pics/reviews), I'll ask for someone else, and if they're disappointing, too, I walk.
