You can specify the number of dances ahead of time. They'll ask. If you pay for 2 dances, you'll hand $40 to the bartender up front. If you go over, they'll charge you for each additional dance afterwards. They won't interrupt your dance midway to make you pay for another. What you negotiate with the dancer for extras is separate. For me, it's usually 3-4 dances (because I'm old), plus whatever I'm in the mood for that day with the dancer (anywhere from 60-100 depending).
